Tarka (Noun.), also is known as the baghaar or chownk is prepared just before serving boiled lentils. A tarka is prepared with a mix of spices fried in oil or ghee until sizzling and aromatic, and then folded through the creamy pulses. Indian restaurants serve hot steamy Tarka daal with roti or rice (chawal).
