About The Indian Chicken Pulao Recipe

According to historical texts, the word "pulao" comes from the Sanskrit word "Pulla" (meaning rice and meat). One historic version of pulao prepared in northern India is the Yakhni Pulao. It is primarily rice cooked in goat meat stock and whole spices. Alternately, Tehri is the vegetarian variant of the pulao, which is made using fresh seasonal vegetables and rice.

White chicken pulao is not as cumbersome as biriyani. Biriyani and pilau are both made with aromatic rice. In biryani, the rice is layered with meat or vegetables, spices, cream, and sauces are added, and the rice is cooked for hours to get the perfect flavours of herbs and meat (or vegetables).

A sumptuous version of biriyani requires vegetables and meat to be "fried before cooking with rice. White chicken pulao is a lighter rendition where you cook the vegetables and add fewer spices, blending the flavours uniformly - it is suitable for those who want to avoid lavish rice dishes.
