Saag aloo (Noun.) - Saag is the recipe that contains many varieties of green leafy vegetables other than spinach. Saag refers to the preparation where a combination of green leafy vegetables like spinach, or collard greens, mustard greens and methi leaves are cooked together in a pan for some hours on low heat to get a paste-like texture.
Saag aloo mostly contains spinach, and saag gosht is a dish made with spinach and goat meat. Such recipes are served by Indo- Pakistani restaurants and take-aways, or it can include land meat instead of goat in the western world. In general, in India vegetarian prepare saag aloo by cooking spinach and potatoes together with herbs and ginger garlic paste.
