Palak (noun.) Indian Spinach or palak is a lot softer and tender with smaller leaves. In North America, spinach leaves are big and very thick, almost impossible to eat raw but in India, several dishes are prepared with spinach that is used in the preparation of saag in winters made from a combination of many other greens like Sarson ka saag or Mustard greens and fenugreek leaves.
Saag Paneer is a famous dish made from Indian cottage cheese cooked in puréed spinach, seasoned with ginger, garlic, garam masala, and other spices.
