Besan Gram flour (called Besan in Hindi) also known as garbanzo bean flour, can be made from either raw chickpeas or roasted chickpeas. Besan and Chickpea flour are not the same. Besan or gram flour is a flour of chana dal or split brown chickpeas. It is a special kind of flour that is a pale yellow colour, made by milling dried brown chickpeas. It is nutritious and gluten-free, which is a real bonus. Gram flour is a wonderful ingredient used in Indian, Middle Eastern and Asian cuisines.
Some iconic Indian dishes using gram flour include pakora where it's made with a batter of vegetables and then deep-fried. The Gujarati light fluffy spiced cake Dhokla is made with steamed besan batter (sautéed with mustard seeds and ginger (Adrak)) and Khandvi is made with the gram flour paste that is sliced into delicate rolls as a starter. It can be used to make confectionaries / Mysore Pak garnished with almonds (badam) or as a thickening agent. It can be added to yoghurt to prepare Kadhi pakora.
