About Black Eyed Beans
Traditionally, the black eyed beans were found in Greece and Caribbean cuisine. In Greece, it is called mavromatika where the method of preparation of the dish is similar to the Indian style of cooking. 

In the European cuisine, it is prepared with bacon or meat to get a buttery, garlicky taste where the final version is sauteed with cayenne pepper sugar and the vinegar to get a sweet-sour tang.

Black Eyed Beans curried vegetarian recipe is lightly-spiced but the Indian restaurants may prepare it in strong aromatic spices and add cream at the end of preparation to get a glossy tadka.
